How to Freeze Summer Squash or Beans
(Zucchini & Yellow Squash & Beans)

Ingredients and Equipment
Fresh summer squash or beans- any quantity.
Vacuum sealer or "ziploc" type freezer bags
1 Large pot of boiling water
1 Large bowl filled with cold water and ice
1 sharp knife
1 clean dish towel or paper towels

Instructions
Start with fresh squash or beans
Wash the vegetables & dry
Slice Squash 1/2 inch thick slices
(no need to cut beans)
Prepare large pot of boiling water 
Prepare 1 bowl with cold water & ice
Put vegetables in boiling water (this is called Blanching) Boil & cover for 3 minutes.

Blanch each vegetable separately as not to mix flavors.
Remove the vegetables from the boiling water and place in the bowl of water & ice for 5 minutes, Let cool.
Drain thoroughly. Pat with clean towel or paper towels to remove as much moisture as possible
Bag the vegetables, remove as much air as possible, then seal, & date the bag. 
Can freeze 9-12 months.
