Since I am the one in our household that loves all the varieties of vegetables, I have a task before me.  I need to find creative recipes that incorporate the vegetables that I am growing in my garden. My husband is not a fancier of the Squash family, so I need to find recipes with hidden squash in them.

Skewered Vegetables With Marinated Chicken

Unfortunately I have a husband who doesn't enjoy grilling out if he has to attend to the grill. He is tired when he comes home from work and would prefer if the meal was ready to serve when he walks in the door. So any grilling at our house is few and far between. I am hoping he will humor me tonight so we can grill out using my garden harvest of the day.


Grilled, Broiled or Baked Marinated Chicken 
     (cut up in strips, marinated in Italian salad dressing, Worcestershire sauce)
     Grill or Bake at 350 for 30 minutes


Grilled or Broiled Vegetables on a Skewer (basted with olive oil)
     Will include:
          Mushrooms
          Zucchini
          Yellow Summer Squash
          Tomatoes
          Onions
          Carrots (Blanched 1st)


Small Red & Yukon Gold Potatoes
     (sliced long-ways, tossed in olive oil, pepper, parsley flakes, onion powder,
     garlic powder & seasoned salt) 
     Broiled or Baked 30 minutes on 400)


Fresh Green Beans 
Mixed Green Salad

Easy & Quick Prep Garden Lasagna


(All the Vegetables as well as the Ground Turkey are Optional...You can pick and choose the ones you want to include in your dish...just be sure to use fresh veggies and have at least 4 so there is enough substance to your lasagna dish...Enjoy!)


Ingredients
1 1/2 teaspoon Olive Oil
1 Pound Ground Turkey
3 1/2 Cups Chopped Fresh Zucchini
1/2 Cup Chopped Onion
3/4 Cup Chopped Carrots
1 1/2 Cup Corn 
3/4 Cup Mushrooms
1/2 Cup Chopped Broccoli
1 Cup Fresh Spinach Torn
1 Small Tomato Chopped
1/4 Cup Chopped Fresh Basil
1/2 teaspoon Salt
1/2 teaspoon Fresh Ground Pepper
1/4 Cup All-Purpose Flour
3 Cups 1% Low Fat Milk
1 Cup 1% Low Fat Cottage Cheese +1 egg whisked in
1/2 Cup Grated Fresh Parmesan Cheese
Cooking Spray
9 Uncooked Lasagna Noodles
1 Cup Shredded Low Fat Part Skim Mozzarella Cheese

1.  Preheat over to 350.

2.  Heat oil in large nonstick skillet over medium-high heat. Add Zucchini, Onions, Mushrooms, Carrots, Tomato, and Broccoli, then saute' 8 minutes or until lightly browned.  Stir in Spinach, Corn, Basil, salt and pepper, saute' lightly for 2 minutes, then remove from heat.  Set aside.


3.  In separate skillet, thoroughly cook and brown the Ground Turkey. Set aside.


4.  Lightly spoon flour into a dry measuring cup, level with a knife.  Place flour in a large saucepan, gradually add milk, stirring with a whisk.  Cook and stir over medium heat until mixture comes to a boil, reduce heat and simmer 2 minutes, stirring constantly.  Remove from heat, stir in Cottage cheese/egg mixture, Parmesan cheese, salt and pepper.

5.  Spray 8x11 baking dish (I use Corning or Pyrex) , then spread 1/2 Cup white sauce in bottom of dish.  Arrange 3 noodles over sauce, top with half the vegetable mixture (about 2 Cups), 1/2 the Ground Turkey, and one third of the remaining white sauce (about 3/4 Cup) and sprinkle with 1/3 Cup Shredded Cheese. Top with 3 noodles, remaining vegetable mixture, remaining Ground Turkey, and half the remaining sauce & 1/3 Cup Shredded Cheese and 3 more noodles.  Spread the remaining white sauce over the noodles. 


6.  Cover with foil and bake at 350 for 30 minutes. Uncover, sprinkle with Mozzarella and bake an additional 30 minutes or until golden brown. Let stand 15 minutes.  Serves 6-8.

NOTE:
I changed the original recipe, from all Veggies, (it did not have Ground Turkey in it). I added the Ground Turkey so my husband would be more satisfied.  I did not add the Corn or the Broccoli and cut back on the Basil.  If you follow me, you will find that I frequently change and recreate recipes and enjoy doing so...and have had very favorable reviews from those who enjoy my cooking. We ate about 1/3 of it. I am freezing the rest into 2 meals.  I will let you know how it freezes.
